Method

1.Preheat oven to moderate, 180°C.
2.Heat a greased, oven-proof frying pan on medium. Cook leek for 6-8 minutes until softened and starting to brown. Add capers and cook for 1 minute, then stir in wine to deglaze pan. Mix in tomatoes and bring to a simmer.
3.Place fish in pan and cover with sauce mixture. Bake for 8-12 minutes until fish is cooked through and flakes easily when tested. Serve with crusty bread, if desired.
  • Fish cooking time will depend on the thickness of the fillets. Check after 8 minutes.
