The classic ANZAC biscuit is the most famous of New Zealand’s own biscuits, named after the Australian & New Zealand Army Corps soldiers who fought in World War I. A classic cookie and a must-try!

Ingredients

Method

1.Preheat oven to 150°C (130°C fan-forced). Lightly grease and line two oven trays with baking paper.
2.In a medium bowl, combine oats, flour, coconut and sugar. In a small saucepan, combine butter and golden syrup. Stir over low heat 2-3 minutes or until melted.
3.In a jug, combine water and soda. Stir into butter mixture, then pour into dry ingredients, mixing well.
4.Roll tablespoons of mixture into balls. Arrange on trays, 4cm apart, to allow room for spreading. Flatten gently with fingertips or a fork if liked (see tip).
5.Bake 15 minutes (for chewy) or 20 minutes (for crispy). Cool on trays 5 minutes before transferring to a wire rack to cool completely. Store in an airtight container.

MAKES 28 Pressing mixture lightly to flatten before baking makes crunchier biscuits. Replacing 1/2 cup plain flour with the same amount of self-raising flour results in chewier biscuits. Sandwich biscuits together with a scoop of ice-cream to make easy ice-cream sandwiches.
