Triple-cheese muffins
- 1 cup (150g) self-raising flour
- 1/2 teaspoon bicarbonate of soda
- 1/4 teaspoon cayenne pepper
- 2 eggs
- 1 1/4 cup (310ml) milk
- 20 gram butter, melted
- 4 green onions, finely chopped
- 2 tablespoon finely grated mozzarella cheese
- 2 tablespoon finely grated parmesan cheese
- 2 tablespoon finely grated cheddar cheese
Method
Triple-cheese muffins
- 1Preheat oven to 200°C (180°C fan-forced). Grease eight holes of 12-hole (⅓-cup/80ml) muffin pan.
- 2Sift flour, soda and cayenne into medium bowl. Whisk egg, milk, butter and onion in small bowl. Pour egg mixture into flour mixture; whisk until combined (do not over-mix).
- 3Spoon half of the mixture into pan holes; sprinkle with combined cheeses. Top with remaining mixture.
- 4Bake muffins about 20 minutes. Stand muffins in pan 5 minutes then turn top-side up onto a wire rack to cool.
