Triple-cheese muffins
  • 1 cup (150g) self-raising flour
  • 1/2 teaspoon bicarbonate of soda
  • 1/4 teaspoon cayenne pepper
  • 2 eggs
  • 1 1/4 cup (310ml) milk
  • 20 gram butter, melted
  • 4 green onions, finely chopped
  • 2 tablespoon finely grated mozzarella cheese
  • 2 tablespoon finely grated parmesan cheese
  • 2 tablespoon finely grated cheddar cheese

Method

Triple-cheese muffins

    Preheat oven to 200°C (180°C fan-forced). Grease eight holes of 12-hole (⅓-cup/80ml) muffin pan.

    Sift flour, soda and cayenne into medium bowl. Whisk egg, milk, butter and onion in small bowl. Pour egg mixture into flour mixture; whisk until combined (do not over-mix).

    Spoon half of the mixture into pan holes; sprinkle with combined cheeses. Top with remaining mixture.

    Bake muffins about 20 minutes. Stand muffins in pan 5 minutes then turn top-side up onto a wire rack to cool.
