Thai sweet and spicy vegetable toss

Ingredients
- 4 cup (or 2 medium-size cups) kumara, sliced or diced approximately 2cm thick
- 1 tablespoon Exotic Foods sesame oil
- 3 cup broccoli (1 large broccoli head) cut into florets
- 4 tablespoon tahini
- juice of 2 lemons
- 1 tablespoon Exotic Foods Matsaman curry paste
- 1 ½ -2 tablespoons honey (according to taste)
- 1/4 cup Exotic Foods coconut milk
- 2 cup thinly sliced red or green cabbage
- fresh herbs to decorate (optional)
- 1/4 cup toasted cashews, for garnish
Method
- 1Preheat oven to 180°C. Place kumara on a baking paper-lined tray, drizzle with oil and bake for 20 minutes or until just tender. Steam broccoli for 4 minutes or until cooked.
- 2In a small bowl, combine tahini, lemon juice, curry paste and honey, with enough coconut milk to form a dressing consistency and mix well.
- 3Combine cooked kumara, broccoli and sliced red cabbage in a mixing bowl, add dressing and toss to coat. Sprinkle with fresh coriander and toasted cashews if desired.
Notes
- Turn this side dish into a main dish by serving in bowls topped with cooked shredded chicken or slices of seared steak or tuna.
