  • 2 eggs
  • 1/2 cup caster sugar
  • 3 tbsp plain flour
  • 3 tbsp cornflour
  • 1 tsp baking powder
  • 150 ml cream, whipped
  • 1 cup strawberries, thinly sliced
  • Icing sugar, to dust

  • 1
Heat oven to 180ºC fan bake. Line 2 (or more) trays with baking paper.

Whisk the eggs and sugar until pale and foamy. Sift the flour, cornflour and baking powder together, then fold into the egg/sugar mix. Drop teaspoonfuls of sponge mixture onto prepared trays, allowing plenty of room for spreading. Bake for 8-10 minutes or until golden and puffed. Remove with a spatula and cool on a wire rack. Reuse the tray until the batter is finished. You ought to get 40-48 sponge drops.

Spread whipped cream over the sponge drops, top with strawberry slices, then add another sponge drop to make a sandwich. Dust with icing sugar and serve!
