Strawberry and cream sponge drops

These dainty little strawberry sponge sandwiches are divine! The only problem is, it’s very easy to eat a lot of them - which makes them perfect for dinner parties so they can be gobbled up quickly by your guests.

Method

1.Heat oven to 180ºC fan bake. Line 2 (or more) trays with baking paper.
2.Whisk the eggs and sugar until pale and foamy. Sift the flour, cornflour and baking powder together, then fold into the egg/sugar mix. Drop teaspoonfuls of sponge mixture onto prepared trays, allowing plenty of room for spreading. Bake for 8-10 minutes or until golden and puffed. Remove with a spatula and cool on a wire rack. Reuse the tray until the batter is finished. You ought to get 40-48 sponge drops.
3.Spread whipped cream over the sponge drops, top with strawberry slices, then add another sponge drop to make a sandwich. Dust with icing sugar and serve!

Slice strawberries thinly so they’re easier to eat!
