Stir-fry turkey with basil and fried egg

Turkey isn't just for Christmas - this delicious recipe uses turkey mince in a stir fry, complete with basil leaves and fried eggs. A wholesome dinner dish that can be made in just over 30 minutes.

Ingredients

Method

1.In a small bowl, combine sauces and juice. Set aside.
2.In a wok or frying pan, heat 2 teaspoons of the oil on high. Fry eggs one at a time, adding oil for each, for 1-2 minutes or until edges are golden and crinkled but yolk is still runny. Transfer to a plate and keep warm.
3.Heat remaining oil in same wok on high. Stir-fry garlic and chilli (if using) for 1 minute. Add turkey mince and stir-fry, breaking up lumps, for 4-5 minutes until browned. Add beans, extra fish sauce and sugar. Stir-fry for 1-2 minutes, then remove from heat and toss basil through.
4.Serve turkey in lettuce cups, topped with egg and drizzled with prepared chilli sauce. Accompany with lime wedges.

You can use pork or chicken mince instead of turkey.
