Gingerbread waffles

Method

1.Place the persimmon slices, orange slices, juice, sugar and spices in a shallow frying pan, then cover and cook gently until tender. Stir in the arrowroot mixture and set aside.
2.Whisk the egg whites to stiff peaks and set aside. In a medium-sized mixing bowl, whisk the egg yolks, milk, melted butter, and molasses. In a large mixing bowl, sift together the flour, sugar, baking powder, baking soda, and spices.
3.Add the egg yolk mixture to the flour mixture and whisk to form a thick batter. Fold in the egg whites.
4.Preheat a waffle iron according to the manufacturer’s instructions. Cook the waffles: Spoon or pour approx 1/3 cup of batter into the waffle iron and cook according to the manufacturer’s instructions, usually for 2 to 3 minutes. To serve, spoon poached persimmons onto hot waffles and add a scoop of ice cream or dollop of cream if desired.
