Spiced nuts

Ingredients

Spiced nuts
  • 2 teaspoon cumin seeds
  • 2 teaspoon coriander seeds
  • 2 teaspoon mustard seeds
  • 2 teaspoon fennel seeds
  • 1 teaspoon ground cinnamon
  • 1 teaspoon black peppercorns
  • 2 teaspoon ground turmeric
  • 2 tablespoon brown sugar
  • 600 gram nuts - your favourite combination of peanuts, pumpkin seeds, hazelnuts and brazil nuts
  • 3 tablespoon olive oil
  • 2 to 3 tsp flakey salt

Method

    Preheat oven to 160°C fan bake.
  • 2
    Place all the spices into a spice grinder or blender and grind to a fine powder.
  • 3
    Transfer spice mixture to a large bowl and add brown sugar and nuts.
  • 4
    Add olive oil and mix well, place onto a baking tray and sprinkle salt over mixture.
  • 5
    Bake for 25 to 30 minutes, stirring mixture every 10 minutes.
