Spiced meatball wraps

Packed with heaps of flavour, these delicious spiced meatball wraps are brilliant served with a couscous salad and enjoyed for a delicious budget-friendly midweek meal

Ingredients

  • 2 tablespoon oil
  • 1 onion, finely sliced
  • 2 garlic cloves, crushed
  • 1 teaspoon ground cumin
  • 1/2 teaspoon each ground cinnamon, coriander
  • 1/2 teaspoon dried oregano
  • 500 gram lamb mince
  • 4 pita breads, warmed
  • mixed salad, hummus to serve
Couscous salad
  • 1 cup couscous
  • 1 cup boiling water
  • 1/2 bunch mint leaves, chopped
  • 1/2 bunch parsley leaves, chopped
  • 2 tomatoes, seeded, chopped
  • 1/2 red onion, finely chopped
  • 1 garlic clove, crushed

    In a frying pan, heat half the oil on medium. Sauté onion and garlic for 2-3 minutes. Add spices and oregano, then sauté for 1-2 minutes until fragrant. Transfer to a bowl. Cool slightly, then combine with mince and shape into 12 balls. Cover and chill for 30 minutes.

    COUSCOUS SALAD. Place couscous in a heatproof bowl. Pour over water. Set aside, covered, for 5 minutes. Fluff with a fork. Cool, then stir in remaining ingredients and season.

    In the same frypan, heat remaining oil on medium. Cook meatballs, turning, for 8-10 minutes until browned and cooked.

    Top each pita with a large spoonful of couscous salad and 3 meatballs. Serve with salad and hummus.
