Sirloin steak is expertly cooked and sliced into strips for these Middle Eastern wraps with hummus and yoghurt

Spiced beef and hummus wraps
  • 800 gram thick boneless sirloin steaks
  • 2 tablespoon middle eastern spice mix
  • salt and freshly ground black pepper
  • 4 pieces mountain bread or lavash or pita
  • 1/2 cup (130g) hummus
  • 2 large (180g) tomatoes, sliced thickly
  • 1 (180g) baby cos lettuce
  • 1/4 cup (70g) greek-style yogurt

    Trim excess fat from steaks and sprinkle with Middle Eastern spice mix.

    Cook steaks on a heated, oiled grill pan (or barbecue or pan-fry) for about 5 minutes on each side or until done as desired. Sprinkle with salt and pepper.

    Serve steaks sliced with bread, hummus, tomato, lettuce and yoghurt.
