Method

1.Combine octopus and lemon juice in a bowl. Cover and set aside to tenderise.
2.In a large saucepan, heat oil on medium. Saute onion and garlic 3-4 minutes, until softened. Add paprika and cook, stirring, 1 minute, until fragrant. Add tomatoes and cook, stirring, 3-4 minutes, until tender. Add brandy and simmer, stirring, for 1 minute more.
3.Pour stock and water with saffron into saucepan. Bring to boil on high. Reduce heat to low and simmer, uncovered, 20 minutes.
4.Mix in drained octopus, fish, mussels and prawns. Simmer, covered, for 4-5 minutes (seafood is cooked when mussels open and fish becomes flaky in texture). Season to taste. Serve with chopped parsley.
