Walnut dressing
- 2 tablespoon roasted, finely chopped walnuts
- 1/4 cup buttermilk
- 2 tablespoon red wine vinegar
- 1 tablespoon avocado oil
- 1 tablespoon honey
Smoked trout, sprout and apple salad
- 450 gram whole hot smoked trout, skinned, boned, coarsely flaked
- 300 gram mixed sprouts
- 1 small granny smith apple, very thinly sliced
- 1/2 cup walnuts, roasted, chopped
- 1/2 cup shaved pecorino
- 50 gram small butter lettuce leaves
Method
Smoked trout, sprout and apple salad
- 1Make dressing: While the walnuts are still hot from being roasted, combine dressing ingredients in a screw-top jar, shake to combine; season to taste.
- 2Carefully, combine all ingredients in a large bowl, drizzle with dressing. Serve with crusty bread if you like.
Notes
You can use pear and parmesan instead of apple and pecorino in this salad, if you wish. Remove the meat from the fish with your hands for best results. Use a mandoline for thinly sliced apple pieces.
