Smoked chicken, potato and asparagus salad
This smoked chicken salad is seriously delicious. It's a meal in itself with baby potatoes, green beans and asparagus tossed in a tangy mustard dressing. Serve for a criminally tasty lunch or dinner

Smoked chicken, potato and asparagus salad
- 20 baby or chat potatoes, unpeeled
- 2 teaspoon salt
- 400 gram green beans
- 1 bunch asparagus spears, cut into 5 cm lengths
- 1 smoked chicken
- 1 cup chopped flat-leaf parsley
Dressing
- 1 tablespoon wholegrain mustard
- 1 tablespoon honey
- 1 tablespoon sherry vinegar
- 2 tablespoon olive oil
- 1 tablespoon finely chopped parsley
- salt and freshly ground black pepper
Method
Smoked chicken, potato and asparagus salad
- 1Bring saucepan of water to boil, add potatoes and salt and simmer for 20 minutes. Add beans after 15 minutes, and asparagus after 18 minutes.
- 2Meanwhile, shred smoked chicken into bite-size pieces.
- 3To make dressing, whisk mustard, honey, vinegar, olive oil and parsley until thickened. Season with salt and pepper.
- 4Drain vegetables and cut potatoes in half. Toss vegetables in dressing. Add chicken. Drizzle with any remaining dressing and serve.
Notes
You can find smoked chickens in the deli section of the supermarket. Or, if you prefer, use smoked trout fillets or sliced smoked salmon. If you don't have sherry vinegar, try using red wine vinegar or apple cider vinegar.
