Skillet apple bread pudding for two

This pudding has got to go down as one of the tastiest things you can make in a skillet. Apples and raisins are paired with the subtle spices of cinnamon, ginger and nutmeg, making a warming dessert for two that can be whipped up in no time.

  • 2 apples, chopped
  • 1/4 cup raisins
  • 2 tbsp brown sugar
  • 50 g butter, plus 2 tbsp extra
  • 1 cup fresh sourdough breadcrumbs
  • 1 tsp each cinnamon and ground ginger
  • 1/2 tsp nutmeg
  • Ice cream, to serve

    Preheat oven to 180°C. In a small ovenproof pan, cook the apples, raisins and sugar in the 50g of butter on medium heat until it starts to caramelise and the apples release their juices – about 5-7 minutes.

    Toss the breadcrumbs with the extra butter, cinnamon, ginger and nutmeg. Sprinkle it over the fruit.

    Bake for 15-20 minutes or until the bread is golden and crispy.

    Serve with ice cream. Yum!


Sourdough bread gives a great texture and a tangy taste to this pudding.
