  • 400 g can jackfruit
  • 1 tbsp olive oil
  • 1 onion, halved and sliced into thin rings
  • 3/4 cup barbecue sauce
  • 1/2 cup cider or beer
  • 4 large or 6 smaller burger buns**
  • 1/4 cup mayonnaise
  • Mixed lettuce leaves, sliced cucumber and tomato

  • 1
Rinse and drain jackfruit well then slice thinly (this improves the meaty texture).
  • 2
Heat oil in a medium saucepan on medium heat, add onion and cook for a few minutes until softened and starting to caramelise. Add jackfruit, sauce and cider or beer then simmer for 10-15 minutes, stirring occasionally, until shredded and saucy.
  • 3
Toast buns if desired and spread bases with mayonnaise. Layer with lettuce leaves, sliced cucumber and tomato, then spoon on the warm jackfruit mix and sandwich with the bun tops.
