Salted caramel white chocolate drink

  • 1/3 cup caster sugar
  • 1/2 teaspoon salt flakes
  • 20 grams butter
  • 1/2 cup cream
  • 2 cups milk
  • 100 grams white chocolate
  • 2 tablespoons almond butter

    Sprinkle caster sugar and salt flakes over the base of a medium heavy-based saucepan. Place pan over low-medium
    heat. Cook, without stirring, until sugar liquefies and forms a golden caramel. Immediately add butter and cream, stirring
    until smooth. Remove from heat and reserve ¼ cup mixture.

    Add milk to pan and stir until remaining caramel melts. Add white chocolate, chopped, stirring until melted. Stir in almond butter. Strain mixture through a fine sieve into a jug. Pour into two large mugs.

    Top each mug with a handful of caramel popcorn, then drizzle with reserved caramel.
