Salted caramel white chocolate drink

Ingredients
- 1/3 cup caster sugar
- 1/2 teaspoon salt flakes
- 20 grams butter
- 1/2 cup cream
- 2 cups milk
- 100 grams white chocolate
- 2 tablespoons almond butter
Method
- 1Sprinkle caster sugar and salt flakes over the base of a medium heavy-based saucepan. Place pan over low-medium
heat. Cook, without stirring, until sugar liquefies and forms a golden caramel. Immediately add butter and cream, stirring
until smooth. Remove from heat and reserve ¼ cup mixture. - 2Add milk to pan and stir until remaining caramel melts. Add white chocolate, chopped, stirring until melted. Stir in almond butter. Strain mixture through a fine sieve into a jug. Pour into two large mugs.
- 3Top each mug with a handful of caramel popcorn, then drizzle with reserved caramel.
