Method

1.To make the dressing, place soy sauce, mirin, lemon juice and sesame oil into a bowl and stir to combine. Set aside.
2.Using a sharp knife, cut the salmon into thin slices and divide between four serving plates.
3.Place the salad leaves, lemon zest, chilli and a little of the soy dressing into a bowl and toss to combine.
4.Top each salmon carpaccio with some of the salad, sprinkle the sesame seeds on top serve with extra dressing on the side.
