Salmon and broccoli pasta bake

Whether you are cooking a family meal or making lunch or dinner for friends, this fast and fresh pasta dish fits the bill. If you don't have individual ramekins, use a baking dish instead and divide between 4 plates or dishes.

Salmon and broccoli pasta bake
  • 4 individual ramekins
  • 375 gram spiral pasta
  • 1 tablespoon olive oil
  • 1 chopped red onion
  • 2 crushed garlic cloves
  • 300 millilitre thickened cream
  • 1 cup broccoli florets
  • 415 gram can drained and flaked salmon
  • 2 tablespoon chopped parsley
  • 3/4 cup grated tasty cheese

    Preheat oven to hot, 200°C. Lightly grease ramekins. Cook pasta following packet instructions. Drain.

    Heat oil in frying pan on high. Saute onion and garlic for 2-3 minutes or until tender.

    Stir in cream and broccoli florets. Simmer for 1-2 minutes or until thickened slightly.

    Add pasta, salmon and chopped parsley. Season to taste.

    Spoon into prepared dishes. Sprinkle with cheese. Bake for 15-20 minutes or until golden.
