Rich caramel sauce
  • 1 cup (220g) caster (superfine) sugar
  • 1/2 cup water
  • 300 millilitre thickened (heavy) cream

    Stir sugar and water in a small saucepan over low heat until sugar dissolves.

    Boil, uncovered, without stirring, for 15 minutes or until mixture turns a caramel colour. Remove from heat; allow bubbles to subside.

    Gradually add cream, stirring constantly, over low heat, until sauce is smooth. Cool 10 minutes.
