Rare-beef sliders with caramel onions

Ingredients
- 500 gram beef fillet or similar
- olive oil
- 2 large onions, sliced
- 1 tablespoon honey
- 3 sprigs thyme
- 1/4 cup apple cider vinegar
- 1 teaspoon caraway seeds
- 1 tablespoon wholegrain mustard
- 12 slider buns
- handful rocket leaves
- 12 small slices swiss or cheddar cheese
Method
- 1Rub the beef with a little oil and seasoning and barbecue or roast to your liking. Rest the meat for at least 10 minutes before slicing thinly.
- 2In a frying pan on medium heat cook onion in about 1 Tbsp oil until soft and starting to brown, then add honey, thyme, vinegar, caraway seeds and mustard and allow to simmer until sticky and golden.
- 3Split the slider buns and layer with the sliced beef, caramel onions, rocket leaves and sliced cheese.
