Prawn and oyster platter

This prawn and oyster platter is the perfect accompaniment to any summer event. With two fantastic sauce recipes, and lots of lemon to serve, this will keep all your guests happy.

  • 2 dozen oysters
  • 1 kilogram medium cooked king prawns
  • lemon wedges to serve
Pickled onion dressing
  • 1 red onion, finely chopped
  • 2 teaspoon finely chopped dill
  • 1/3 cup red wine vinegar
  • 1 tablespoon sugar
  • 1 tablespoon salt
Marie Rose sauce
  • 1/2 cup mayonnaise
  • 1/2 cup thickened cream
  • 2 tablespoon tomato sauce
  • 1 tablespoon lemon juice
  • few drops of tabasco and worcestershire sauce

    Arrange oysters and prawns on a large platter. Cover and chill until required.

    For Pickled onion dressing, combine all the ingredients in a bowl. Set aside for 30 minutes.

    For Marie Rose sauce, whisk all the ingredients in a bowl. Season, then cover with cling film and chill until required.

    Serve oysters topped with pickled onion dressing and prawns with the Marie Rose sauce. Serve with lemon wedges.


Buy oysters on the day of serving or, at the earliest, the day before.
