Potato wedges
  • 6 kipfler potatoes, cut into wedges
  • 1/4 cup (60m|) rice bran or light olive oil
  • light sour cream or natural yogurt, tomato or barbecue sauce, to serve (optional)

    Preheat oven to 210°C or 190°C fan. Place potato in a heavy baking dish with oil and 1 teaspoon salt and toss to coat.

    Bake potatoes for 40-45 minutes, turning occasionally, until golden and crisp. Serve immediately with sour cream or yogurt and tomato or barbecue sauce for dipping.


These are a great lower-fat alternative to deep-fried chips. For added flavour, before baking toss wedges with freshly chopped herbs, rind and juice of 1 lemon and a grinding of pepper, or 2 teaspoons cajun or mexican seasoning mix.
