Method

1.In a food processor, blend all the sauce ingredients until they form a thick sauce.
2.Cut ribs into 2-3 pieces and pat dry. Smear half the sauce over the ribs, reserving the rest.
3.Preheat oven to 180°C. Put ribs in a saucepan with ¼ cup water. Cover and cook for 20 minutes until the pork is cooked, though it may not be completely tender at this stage.
4.Tumble the ribs out onto a baking paper-lined tray, cover with foil and bake for 30 minutes before removing the foil, giving the ribs a quick toss to coat in the sauce.
5.Cook uncovered for a further 15 minutes or until they are deep brown and tender.
6.While the ribs cook, pour the remaining sauce into the saucepan and simmer for 10 minutes until it thickens.
7.Serve with a side of warm sauce and plenty of serviettes!
