Polenta-crumbed whiting with rocket pesto

There's no need to go to that greasy corner store to quench those fish and chips cravings. With polenta and rocket pesto this ten minute gourmet wonder will have you coming back for more.

Polenta-crumbed whiting
  • 1 egg, beaten
  • 3 cup instant polenta
  • 1 lemon, finely grated zest
  • 12 whiting fillets
  • 2 tablespoon olive oil
  • chips. to serve
Rocket pesto
  • 120 gram baby rocket
  • 1/2 cup toasted almonds
  • 1/2 cup olive oil
  • 1/4 cup parmesan, finely chopped
  • 2 clove garlic, roughly chopped
  • 1/4 cup lemon juice

    Place egg in one bowl and combine polenta and zest in another. Dip fish in egg and coat in polenta mixture. Arrange on a tray; cover and chill until required.

    To make rocket pesto, in a food processor, combine rocket, almonds, oil, parmesan and garlic. Pulse to form a paste. Add juice; season to taste. Process until smooth. Spoon pesto into small serving bowls.

    Heat oil in a large frying pan on medium. Fry fish, in 2 batches, 1-2 minutes each side, until golden and cooked through. Drain on paper towel.

    Divide fish and chips among serving dishes. Serve with pesto.
