Method
Pineapple chai fool
1.In a small saucepan combine water and sugar. Stir over low heat until sugar dissolves. Add pineapple and tea bags. Simmer 2-3 minutes until pineapple is tender, but still holds its shape. Cool, then then discard tea bags.
2.Drain pineapple over a bowl, retaining syrup.
3.In a bowl fold yoghurt and custard together. Dip biscuits into syrup. Layer into a serving glass with yoghurt mixture, and most of the pineapple (see tip).
4.Serve chilled topped with remaining pineapple and pistachios.
For ease, simply fold all ingredients together in a large bowl, spoon into serving glasses and sprinkle with pistachio and mint to serve.
