Low-fat pineapple chai fool
This low-fat dessert combines sweet, tropical pineapple with chai tea spices to create a flavour-packed dessert you won't feel guilty about eating every day. Try serving with creamy yoghurt for a brilliant sweet-treat.

Pineapple chai fool
- 1/2 cup water
- 1/4 cup caster sugar
- 1/4 pineapple, peeled, cored, thinly sliced
- 2 chai tea bags
- 2 x 150g tubs vanilla fruche yoghurt
- 1 cup low fat custard
- 8 sponge fingers, broken
- 1 tablespoon sliced pistachios, to serve
Method
Pineapple chai fool
- 1In a small saucepan combine water and sugar. Stir over low heat until sugar dissolves. Add pineapple and tea bags. Simmer 2-3 minutes until pineapple is tender, but still holds its shape. Cool, then then discard tea bags.
- 2Drain pineapple over a bowl, retaining syrup.
- 3In a bowl fold yoghurt and custard together. Dip biscuits into syrup. Layer into a serving glass with yoghurt mixture, and most of the pineapple (see tip).
- 4Serve chilled topped with remaining pineapple and pistachios.
Notes
For ease, simply fold all ingredients together in a large bowl, spoon into serving glasses and sprinkle with pistachio and mint to serve.
