Method

1.Heat a large oiled frying pan on high. Season steaks and cook 2-3 minutes each side for rare, 4 minutes for medium and 5-6 minutes for well done. Rest, loosely covered with foil, 3-5 minutes, to ensure tenderness.
2.Meanwhile, add peppercorns to unwashed pan. Cook over low heat, 1 minute.
3.Add cream and bring to simmer. Cook, 1-2 minutes, until thickened. Season to taste. Serve steaks with sauce poured over. Accompany with chips and salad, if you like.
