Method
1.Preheat oven to moderate 180°C. Line two oven trays with baking paper.
2.In a bowl, using an electric mixer, beat butter and sugar together until creamy. Beat in peanut butter, then egg.
3.Sift rice flour and baking powder together. Mix into creamed mixture until well combined.
4.Spoon tablespoonfuls of the mixture into balls and arrange on trays, allowing room for spreading. Bake for 8 minutes.
5.TOPPING: In a bowl, combine chocolate and peanuts. Sprinkle evenly over each biscuit. Bake for a further 2-3 minutes, until biscuits are golden. Cool on trays. Store in an airtight container.
MAKES 24 Spray a little oil onto the oven trays before lining them with paper, to make sure the paper doesn’t slip.
