Peanut butter and honeycomb biscuits

Honeycomb and peanut butter are perfect partners in these delicious biscuits. Serve with a cup of tea or coffee or a glass of milk - but be warned, you won't be able to stop at one!

Ingredients

Method

1.Preheat oven to 180°C (160°C fan-forced). Lightly grease and line four oven trays with baking paper.
2.In a large bowl, using an electric mixer, beat butter and peanut butter until creamy. Add sugar, egg and vanilla; beat until light and fluffy. Fold flour and Violet Crumble bar through mixture.
3.Roll level tablespoonfuls of mixture into balls. Arrange on prepared trays about 4cm apart. Flatten biscuits slightly.
4.Bake for 12-15 minutes or until golden. Cool for 5 minutes on trays before transferring to a wire rack to cool completely. Drizzle with melted chocolate. Allow to set at room temperature. Store in an airtight container.

You can add 1/2 cup roughly chopped peanuts to the biscuit mixture in step 2, if you like. Drizzling with melted chocolate is optional.
