Parmesan garlic potato chunks

Ingredients
- 1.25 kilogram floury potatoes, scrubbed
- 25 gram butter, softened
- 2 clove garlic, crushed and chopped
- 2 tablespoon olive oil
- 2 tablespoon rosemary, finely chopped
- 1 cup grated Parmesan cheese
- sea salt and freshly ground black pepper
Method
- 1Preheat the oven to 200°C.
- 2Chop potatoes into chunks, roughly 3cm in diameter. Pat dry with paper towels.
- 3Mix the butter, garlic and olive oil together in a small bowl.
- 4Arrange potatoes in a single layer in a large roasting dish.
- 5Drizzle over the garlic butter mixture and toss to coat.
- 6Bake for 40 minutes or until the potatoes are golden and cooked through.
- 7Remove the dish from the oven a few minutes before the end of cooking.
- 8Sprinkle potatoes with rosemary, cheese and season with salt and pepper. Return pan to the oven. Cook for 5 minutes until the cheese is melted and golden brown. Serve at once.
