These incredibly delicious parmesan and parsley fried green olives are so quick and easy to make! These nibbles are the perfect recipe for friends and family to enjoy at your next cocktail party

Method

1.In a small bowl, combine breadcrumbs, parmesan and parsley. Place the flour and egg in two separate bowls.
2.Working a few at a time, dip each olive in the flour, then egg mixture and finally roll in the breadcrumbs to coat. Chill for 10 minutes.
3.Heat oil on medium until a cube of bread sizzles immediately as it is added. Add the olives in 3 batches and fry for 1-2 minutes, until golden brown. Remove with a slotted spoon and drainon paper towel. Serve hot.
  • When making breadcrumbs, use day-old bread. – For shallow frying, you need about 1cm depth of oil in the pan.
