Paleo coconut date balls

For a snack or a sweet share plate, these nutty date balls are perfect. Made with mostly pantry ingredients, they require no cooking and can be created in just minutes.

Ingredients

Method

1.Place dates in a heatproof bowl. Cover with boiling water; stand for 2 minutes or until softened slightly. Drain well and cool. Process dates, cinnamon, nutmeg, almonds, zest and juice until just combined. Shape into 16 balls.
2.Place coconut on a large flat plate. Roll date balls in coconut to lightly coat. Place balls on a fresh plate. Cover with plastic food wrap; chill for 30 minutes. Serve.

Make ahead: Prepare balls up to 2 weeks ahead. Store in an airtight container in the fridge. Makes 16
