Pad Thai NZ Pork Salad

Simple and speedy, if you’re trying to find a midweek salad the whole family will love, then this is it

Ingredients

  • 350 g NZ Pork fillet, sliced
  • 1 tbsp sesame oil
  • 150 g rice noodles
  • 2 tsp peanut oil
  • 4 eggs, beaten
  • 1 carrot, julienned
  • 3 spring onions, sliced
  • 1/2 cabbage, shredded
  • 1 cup bean sprouts, trimmed
  • 1 bunch coriander, leaves picked
  • 1/2 cup chopped roasted peanuts, sliced red chilli, lime wedges to serve
Dressing
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 tbsp fish sauce
  • 1 tbsp tamarind purée

    In a bowl, toss NZ Pork with sesame oil. In a wok, stir-fry for 3-4 mins. Set aside.

    Soak noodles. Drain and rinse.

    DRESSING In a jug, whisk all ingredients together.

    In the wok, heat oil on high. Stir-fry chilli for a few seconds. Add eggs, stirring for 1-2 minutes. Add carrot and onion, stir-frying for 1 minute. Return NZ Pork to wok with noodles and dressing. Toss well. Remove from heat.

    Toss cabbage, sprouts and coriander through. Serve with peanuts, chilli and lime wedges.
