1.Prepare as for cake (see below) but instead preheat oven to moderate, 180°C.
2.Lightly grease and line a 20 x 30cm slice pan and an oven tray. Spoon into pan, smoothing the top. Bake for 50-55 minutes (cover with foil if getting too brown) until cooked when tested. Cool.
3.To make the macadamia brittle, in a small saucepan, bring combined caster sugar and water to the boil, stirring until sugar dissolves.
4.Boil, without stirring, for 8-10 minutes until golden. Remove from heat and stir through macadamias. Pour onto tray and cool. Break into small pieces.
5.Drizzle slice with melted dark chocolate, then sprinkle with brittle and cachous.
