One-pan Spanish beef and rice
This one-pan Spanish beef and rice is a great crowd-pleaser and oh so simple for any day of the week!

Ingredients
- 450 gram lean beef mince
- 1 onion, chopped
- 2 clove garlic, crushed
- 1 teaspoon cumin
- 2 teaspoon Mexican style seasoning
- 3-4 cups of chopped vegetables – or frozen mixed vegetables
- 2 cans of chopped tomatoes or 800g passata
- 1 1/2 cup long grain rice
- 1 1/2 cup Campbell's Real Beef Stock
- 1/2 teaspoon salt
Method
- 1In a large frying pan add the mince and cook, pressing with a potato masher until crumbled. Add the onion and garlic and celery if using, and cook gently till soft. Add the cumin and Mexican seasoning and mix well.
- 2Stir in the rice, salt, tomatoes and stock and then add the vegetables. Bring the mixture to a simmer, stir once to ensure nothing is sticking and cover.
- 3Reduce the heat to low and cook without stirring for 25 minutes. Remove the cover and give it a stir before serving.
Notes
- This is a good way to make a small amount of meat go a long way.
