  • 225 gram plain flour
  • 2 teaspoon baking powder
  • pinch of salt
  • 110 gram butter
  • 250 millilitre milk
  • 240 gram golden syrup (or jam)

  • 1
    Preheat oven to 200°C. Butter a 20cm x 25cm oblong ovenproof dish.
  • 2
Mix the flour, baking powder and salt in a bowl, then rub in the butter. Add 150ml of the milk and mix quickly to a soft dough.
  • 3
Roll out onto well-floured baking paper and make a rectangle that is roughly 30cm x 15cm. Drizzle with golden syrup, leaving a 2cm margin free. Brush the top long edge with milk. Use the paper to help roll up to a log shape, starting from the short side.
  • 4
Transfer to the prepared dish, brush the top with milk, then pour the remaining milk around the pudding.
  • 5
Bake for 30 minutes or until golden and cooked through.
  • 6
Cut into thick slices and serve with ice cream and some of the syrup.
