Old-fashioned golden syrup roly poly pudding

A favourite for school dinners in the UK, the traditional roly poly one of Nici Wickes' most-loved pudding recipes simply because it’s delicious! Fill with golden syrup or jam and serve with ice cream

Method

1.Preheat oven to 200°C. Butter a 20cm x 25cm oblong ovenproof dish.
2.Mix the flour, baking powder and salt in a bowl, then rub in the butter. Add 150ml of the milk and mix quickly to a soft dough.
3.Roll out onto well-floured baking paper and make a rectangle that is roughly 30cm x 15cm. Drizzle with golden syrup, leaving a 2cm margin free. Brush the top long edge with milk. Use the paper to help roll up to a log shape, starting from the short side.
4.Transfer to the prepared dish, brush the top with milk, then pour the remaining milk around the pudding.
5.Bake for 30 minutes or until golden and cooked through.
6.Cut into thick slices and serve with ice cream and some of the syrup.
