1.Melt butter in a large frying pan on high. Add rind, dill and capers. Season to taste. Cook, stirring, 1 minute, until sizzling.
2.Add spinach to pan. Place trout on top. Season to taste. Reduce heat to low and cover. Cook 5-7 minutes, or until trout is cooked to your liking. Serve.
Prepare flavoured butter ahead by combining butter, lemon rind, capers and dill in a bowl. Season to taste. Cover and chill. This dish may be cooked in batches by dividing butter and spinach into four portions.
