Oaty breakfast bars

These scrumptious oaty breakfast bars are the perfect morning meal for people with busy schedules! Make a batch in the weekend so you can grab and go each morning - it couldn't be easier.

  • 1 3/4 cups medium rolled oats
  • 1/2 cup bran
  • 3/4 cup desiccated coconut
  • 1/4 cup whole linseeds
  • 1/4 cup pumpkin seeds
  • 1 tsp cinnamon
  • 1/2 cup raisins or other dried fruit
  • 120 g coconut oil
  • 1 cup coconut sugar
  • 1 egg

    Preheat the oven to 180°C. Line a slice or brownie tin with baking paper.

    In a large bowl combine dry ingredients (except coconut sugar) and toss together.

    Melt the coconut oil, stir the coconut sugar into it then whisk in the egg.

    Make a well in the centre of the dry ingredients and stir in the egg mixture. Mix thoroughly and spoon into the lined tin, pressing it in firmly with the back of a spoon.

    Bake for 20-25 minutes or until golden brown. Allow to cool for 15 minutes before cutting.

    Serve with yoghurt and fresh fruit or eat on the run.
