Oaty apple and apricot slice

This golden slice makes a delicious, homely dessert served with ice-cream.

Method

1.Grease a 19cm x 29cm lamington pan and line base with baking paper. Place dried apricots in small saucepan with ½ cup water, bring to the boil then reduce heat and simmer uncovered for about 3 minutes or until apricots are softened and water is absorbed.
2.Combine the oats with the brown sugar and sifted flour in a large bowl, stir in butter and mix well. Press two-thirds of the mixture over base of prepared pan. Arrange apple slices evenly over base then top with apricots. Sprinkle evenly with remaining oat mixture and press down lightly.
3.Bake in a 180°C preheated oven for 30-35 minutes or until golden brown. Serve warm with cream or ice-cream, if desired.

Slice will keep for several days stored in an airtight container.
