Nici Wickes' easy lemon flan

This is such a simple citrus tart that has become a favourite as it can be made at a minute’s notice. Enjoy either as a light and zingy dessert or with a cup of coffee in the afternoon.

Ingredients

  • 4 medium eggs
  • 1/2 cup butter, melted
  • 3/4 cup sugar
  • 100 g ground almonds
  • 1 cup desiccated coconut
  • Zest of 2 lemons
  • 1 cup lemon juice
  • 1 cup milk
  • 1/2 cup plain flour
  • Crème fraîche, yoghurt or whipped cream, to serve

Method

    Preheat oven to 170°C fan bake. Grease a 24cm flan tin.

    Place all of the ingredients in your food processor and blitz for 1 minute. Pour into the flan tin and place on a tray (to catch any small leaks) in the oven, baking for 45-60 minutes. Take care that it doesn't brown too much on top while cooking. If it is, cover loosely with foil.

    When cooked and cooled, remove from the tin and serve with crème fraîche, yoghurt or whipped cream on the side.

Notes

When Mum first made this for me, I flipped out – it was as good as any lemon tart I'd eaten and yet ridiculously easy to make! Try decorating the top with some thinly sliced glazed lemon if you really want to up the wow factor.
