Nice and easy fish banh mi

This recipe for Vietnamese bahn me combines wholemeal-battered Sealord hoki with cucumber, sprouts and coriander for a light and lovely sandwich

Method

1.Heat the oven to 200°C.
2.Place the Sealord hoki fillets on a baking tray and bake for 12 minutes each side.
3.In a bowl combine the carrot, cucumber, bean sprouts and coriander, and season with fish sauce or soy sauce to taste.
4.Split the rolls down the centre and spread with seafood pâté or mayonnaise.
5.When the fish is cooked, slice in half lengthways and place in the rolls with salad.
  • Serve with some hot sauce for those who like it spicy.

Although banh mi is traditionally served with pâté, it might not be to some people’s taste for breakfast. Here, I’ve replaced the pâté with avocado so the sandwich still has a creamy, rich element. If you can find Vietnamese mint it will make the world of difference to your slaw, otherwise coriander is fine.

The pickled vegetables can be made up to 5 days ahead and refrigerated. The dressing can be made up to 1 day ahead and refrigerated. Fare less intense heat, use Hong red chilli in the dressing instead of a small one. Note
