Nectarine and Pimms picnic jelly jars

These little nectarine and Pimms picnic jelly jars are so much fun to make, and even more fun to eat! Chill in small jars so they are easy to transport, and enjoy for a delightful boozy dessert.

Method

1.Combine the Pimm’s, nectarine slices, apple juice and ginger ale in a saucepan. Heat gently till simmering, then remove from the heat.
2.Strain ½ a cup of the liquid into a bowl. Sprinkle on the gelatine and whisk until completely dissolved. Return the gelatine mixture to the saucepan and gently stir though.
3.Divide the nectarine slices, orange segments and strawberries, if using, between the glasses. Pour on the liquid, add a sprig of mint to each and chill for about 4 hours, or until the jellies are set.

Add other fruits such as peach slices, if desired, but avoid highly acidic fruit such as pineapple or kiwifruit as they will prevent the jelly from setting. The jellies can be made in small jars with lids so they are easy to transport.
