Nectarine and cardamom muffins

This muffin recipe is a one-bowl wonder, easy to throw together and the cardamom is a beautiful whisper of flavour alongside the fruit. And who doesn’t like a freshly baked muffin first thing in the morning? My mum’s muffins are the best – though I might be a bit biased!

Ingredients

Method

1.Preheat oven to 180°C. Grease a 12-hole muffin tin.
2.Cream the butter and sugar until pale, then beat in the eggs. Spoon or pour the yoghurt into the centre of the mixture, then add the baking soda and stir it in (it will froth up!).
3.Gently stir in the flour and cardamom, followed by the nectarines.
4.Spoon into the muffin tins and bake for approximately 15-20 minutes or until they spring back when lightly touched.
5.Dust the muffins with icing sugar. Enjoy with or without butter.

These muffins are delicious made with any fresh fruit – plums, peaches, blueberries or apple slices.
