Ingredients
Mixed berry jam kisses
- 60 gram unsalted butter, at room temperature
- 1/2 cup caster sugar
- 1 egg
- 1/2 cup self-raising flour
- 1/2 cup cornflour
- 1/2 teaspoon ground cinnamon
- icing sugar, for dusting
Mixed berry jam
- 1 cup frozen mixed berries
- 1 cup caster sugar
- 1 1/2 tablespoon lemon juice
Method
Mixed berry jam kisses
- 1Preheat oven to moderate, 180°C. Lightly grease and line 3 oven trays with baking paper.
- 2In a small bowl, using an electric mixer, beat butter and sugar together until light and creamy. Beat in egg until combined. Sift flours and cinnamon together and fold into creamed mixture.
- 3Drop level teaspoonfuls of mixture onto trays, 5cm apart. Bake for 8-10 minutes, until lightly golden. Cool on trays for 5 minutes before transferring to a wire rack to cool completely.
- 4Meanwhile, to make mixed berry jam, place berries in a large microwave-safe bowl. Microwave on high (100%) power for 2 minutes, until warmed through. Add sugar and juice. Microwave 4 minutes. Stir well, then cook for a further 4 minutes, stirring every minute, until you achieve a jam-like consistency. Allow to cool.
- 5Sandwich biscuits with jam. Dust tops with icing sugar.
Notes
If short on time, use your favourite ready-made jam.
