Method

Mixed berry and apple crumble

1.Preheat oven to 180°C. Lightly grease 4 x 1-cup ovenproof dishes.
2.In a large bowl, combine apple, berries, cinnamon and mixed spice. Set aside.
3.Make crumble topping.
4.In a medium saucepan, combine reserved berry syrup with sugar and star anise. Bring to the boil and simmer 4-5 minutes until thickened slightly. Remove star anise. Mix gently into apple mixture. Spoon into prepared dishes.
5.Bake 5-10 minutes until heated through. Sprinkle with crumble. Dust with icing sugar. Top with thick cream.

Crumble topping

6.Place flour, sugar, butter and cinnamon in a food processor. Process until the mixture resembles breadcrumbs. Add hazelnuts and pulse until finely chopped. Sprinkle mixture on a baking tray. Bake 10-15 minutes until golden, breaking it up with a fork twice during cooking.

Use any canned fruit or berries you like for this recipe. The crumble mixture can also be combined and sprinkled over fruit then baked for 10-15 minutes until golden.
