Mini banoffee tarts

These little banoffees are a perfect sweet treat that the kids can help you make. By using bought pecan and caramel biscuits, they use less than six ingredients and take less than five minutes to bake.

Mini banoffee tarts
  • 12 light pecan and caramel cookies
  • 220 gram extra-light spreadable cream cheese
  • 1/3 cup light caramel topping
  • 1 small banana, peeled, thinly sliced
  • 1/4 teaspoon ground cinnamon

    Preheat oven to 180°C/160°C fan-forced. Place 1 cookie, flat-side up, over each hole of a 12-hole (2-tablespoon) round-based patty pan. Bake for 2 minutes or until soft. Working quickly, use a small ladle to carefully press softened cookies into pan; mould into a cup shape. Cool. Transfer cookie cases to a serving plate.

    Using an electric mixer, beat cream cheese and caramel topping in a bowl until smooth. Spoon mixture into cookie cases; top with banana. Serve dusted with cinnamon.


Biscuits will soften. Serve on day they're made. Makes 12 (3 Tarts Per Serve)
