Mexican meatball tortillas

Whip up a batch of these tasty Mexican spiced chicken meatballs in under 10 minutes. Serve your meatballs wrapped in a warm tortilla with fresh salad for a quick family dinner.

Mexican meatball tortillas
  • 500 gram chicken mince
  • 1 sachet burrito seasoning
  • 1 egg
  • 1 clove garlic, crushed
  • 2 tablespoon olive oil
  • 6 flour tortillas
  • 6 butter lettuce leaves
  • 2 tomatoes, cut into thin wedges
  • sour cream, to serve
Avocado salsa
  • 1 avocado, stone removed, peeled, finely chopped
  • 1 tablespoon coriander leaves
  • 1 tablespoon lime juice
  • 1 green onion, thinly sliced

    In a large bowl, combine mince, seasoning, egg and garlic. Mix well. Using wet hands, roll into walnut-sized balls. Arrange on a tray. Chill 20 minutes.

    Heat oil in a large frying pan on high. Cook meatballs 7-8 minutes, turning occasionally, until browned and cooked through.

    Meanwhile, make salsa: in a bowl, combine all ingredients. Mix gently. Season to taste.

    Line each tortilla with lettuce leaves. Top each with 3-4 meatballs, tomato and avocado salsa. Wrap tortillas. Serve with sour cream.
