Meat pie muffins
  • 2 cup plain flour
  • 2 teaspoon baking powder
  • 1 cup milk
  • 2 eggs, lightly beaten
  • 1/2 cup olive oil
  • 1/2 cup grated cheddar cheese
  • tomato sauce, to serve
  • 1 tablespoon olive oil
  • 125 gram beef mince
  • 1/4 cup barbecue sauce
  • 1/4 cup sun-dried tomatoes
  • 50 gram feta, crumbled

    Preheat oven to hot, 200°C. Lightly grease and line a 6-hole texas muffin pan.

    To make filling, heat oil in a large frying pan on high. Add mince; brown well 4-5 minutes, breaking up lumps with a spoon as it cooks. Stir sauce, tomatoes and feta through; cool slightly.

    Sift flour and baking powder together into a bowl. Make a well in centre and mix in combined milk, eggs and oil, until just combined.

    Spoon enough batter into each recess until half-full. Cover with a heaped tablespoon of meat filling. Divide remaining batter among recesses to cover filling. Sprinkle with grated cheese.

    Bake muffins 15-20 minutes, until golden brown. Serve hot or cold with tomato sauce.
