Main meal curry puffs
- 500 gram potato, peeled, cut into 1cm cubes
- 1/2 cup frozen peas
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 250 gram beef mince
- 2 tablespoon vindaloo curry paste
- 4 sheets frozen puff pastry, thawed
- fruit chutney,
- salad leaves, to serve
Method
Main meal curry puffs
- 1Place potato in a medium saucepan and cover with cold water. Bring to a boil on high and cook for 8-10 minutes, until tender. Add peas 30 seconds before end of cooking time. Drain vegetables well.
- 2Meanwhile, in a large frying pan, heat oil on medium. Saute onion for 3-4 minutes, until tender. Brown mince for 5-6 minutes, breaking up lumps as it cooks. Stir in curry paste and cook for 1-2 minutes, until fragrant.
- 3Preheat oven to hot, 200°C. Line two oven trays with baking paper.
- 4Add potatoes and peas to beef mixture. Mix well and season to taste. Cool slightly.
- 5Spoon 1/4 potato mixture over one side of a pastry sheet. Fold in half to cover filling. Trim open sides to make a semicircle, then press edges together to seal. Transfer to a tray. Repeat with remaining ingredients.
- 6Bake for 15-20 minutes, until puffed and golden. Serve with chutney and salad.
