Macaroni cheese with tomato & basil
- 2 cup macaroni
- 1 1/2 cup grated mozzarella
- 1 cup grated tasty cheese
- 1 cup thickened cream
- 2 eggs, lightly beaten
- 2 tomatoes, thinly sliced
- 1 cup fresh breadcrumbs
- 1/2 cup basil leaves
- salad to serve
Method
Macaroni cheese with tomato & basil
- 1Preheat oven to moderate, 180°C. Lightly grease a 6-cup casserole dish.
- 2In a large saucepan of boiling, salted water, cook pasta according to packet instructions. Drain well.
- 3In a large bowl, mix 1 cup mozzarella, tasty cheese, cream and eggs together. Toss through macaroni and season. Pour into dish.
- 4Arrange tomato slices over macaroni. Scatter with combined breadcrumbs and remaining mozzarella.
- 5Bake for 15-20 minutes until macaroni cheese is golden and bubbling. Serve scattered with basil and accompanied with salad.
Notes
✦ Reduce mozzarella cheese to 1 cup and add ½ cup grated parmesan, if preferred. ✦ Try adding 1-2 teaspoons Dijon mustard whisked in with the cream.
