Ingredients

Macaroni cheese with tomato & basil
  • 2 cup macaroni
  • 1 1/2 cup grated mozzarella
  • 1 cup grated tasty cheese
  • 1 cup thickened cream
  • 2 eggs, lightly beaten
  • 2 tomatoes, thinly sliced
  • 1 cup fresh breadcrumbs
  • 1/2 cup basil leaves
  • salad to serve

Method

    Preheat oven to moderate, 180°C. Lightly grease a 6-cup casserole dish.

    In a large saucepan of boiling, salted water, cook pasta according to packet instructions. Drain well.

    In a large bowl, mix 1 cup mozzarella, tasty cheese, cream and eggs together. Toss through macaroni and season. Pour into dish.

    Arrange tomato slices over macaroni. Scatter with combined breadcrumbs and remaining mozzarella.

    Bake for 15-20 minutes until macaroni cheese is golden and bubbling. Serve scattered with basil and accompanied with salad.

Notes

✦ Reduce mozzarella cheese to 1 cup and add ½ cup grated parmesan, if preferred. ✦ Try adding 1-2 teaspoons Dijon mustard whisked in with the cream.
