Lunchbox banana bread
This delightfully dense banana bread is an Australian favourite for a reason. It's easy to make, tastes delicious and is perfect for a lunchbox treat.

Lunchbox banana bread
- 2 cup self-raising flour
- 1 teaspoon ground cinnamon
- 1/2 cup brown sugar
- 4 ripe bananas, well mashed
- 125 gram butter, melted, cooled
- 2 eggs, lightly beaten
- 1/4 cup milk
- 1 teaspoon vanilla extract
Method
Lunchbox banana bread
- 1Preheat oven to moderate, 180°C. Lightly grease and line a 10 x 20cm loaf pan.
- 2Sift flour and cinnamon together into a large mixing bowl. Stir in sugar.
- 3In a large jug, combine banana, butter, eggs, milk and vanilla. Using a wooden spoon, lightly mix banana mixture into flour mixture until just combined.
- 4Pour into pan, smoothing top. Bake for 40-45 minutes, until cooked when tested with a skewer. Cool in pan for 5 minutes before turning onto a wire rack to cool completely. Serve sliced with butter, if liked.
Notes
This loaf freezes well whole or in slices. Place slices straight from the freezer into the lunchbox. It will defrost by lunchtime and help to keep your lunchbox cool.
